Another snowy & icy day Time to bake & quilt

This is a bunt cake that is really enjoyed by all.
CORNMEAL-LEMON CAKE
baking spray(cooking spray with flour)
2 1/2 cups all purpose flour
1/2 cup yellow cornmeal
2 tsp baking powder
1/2 tsp. each baking soda & salt
2 sticks butter(1 cup) unsalted soften
1 3/4 cups sugar
1 tbsp. grated lemon zest
1/4 cup lemon juice
4 eggs
1 cup buttermilk
SUGAR GLAZE
1 cup sugar
1/3 cup lemon juice

1 . Heat oven to 325 You'll need a 12 cup bunt pan coated with baking spray. In a medium bowl , whisk together flour, cornmeal,baking powder and soda & salt,
2. In a large bowl beat butter,sugar,lemon zest and juice with mixer on medium speed until light & fluffy. Beat in eggs one at a time until blended. With mixer on low , alternately beat in flour mixture & buttermilk until batter is smooth. Scrape into prepared pan : level top with a spatula.
3. Bake 55 to 65 minutes until wooden pick comes out clean.When inserted in cake. Cool cake on wire rack 5 minutes.
4 Meanwhile make sugar glaze
Mix ingredients in a small bowl just until combined.(sugar will not be totally dissolved) .Invert cake from pan onto rack..place rack over a baking sheet. Brush glaze glaze all over hot cake until absorbed (sugar crystals will be evident) Cool completely . Transfer cake to a serving plate and cover. Let cake rest for several hours. Cut into thin slices.......to serve.

The love of my life

Miss him especially today his 80th birthday......

Today would be "Goldies" 80th Birthday

I would be making him a PINEAPPLE UPSIDE DOWN CAKE. The following is how I made it.
I used a Pyrex pie plate
1 recipe of hot water sponge cake: to follow.....Fruit...1/4cup butter 1/2 cup of brown sugar
melt butter add brown sugar stir until thoroughly mixed. Low heat.
Remove from heat.add 4 slices of pineapple (may also use some maraschino cherries)
HOT WATER SPONGE CAKE
1 cup sifted cake flour 2 eggs separated
1 1/2 teas.baking powder
dash of salt 1 cup of sugar
6 tablespoons hot water
1 teas. vanilla
sift together flour,baking powder and salt.Beat egg yolks until lemon colored;gradually beat in sugar ,then hot water ,vanilla and finally flour; gently fold in egg whites beaten stiff but not dry
Pour the batter over the fruit mixture.....bake in a moderate oven (350 ) 35-45 minutes..loosen from sides of pan turn over a cake plate and let rest at lest 1 minute and allow the fruit and syrup to to drip onto the cake. ENJOY!
